It's 2 a.m. in a mid-size grocery store. The lights are dimmed, the checkout lanes are empty, but along the wall, a row of open refrigerated display cases is running at full throttle. Cold air pours continuously into the empty aisles. The compressor kicks on every few minutes, as if cooling the entire street.

This isn't a management failure. It's what happens every single night in tens of thousands of food retail locations worldwide.

The problem isn't that the cases are broken. The problem is that after the last customer leaves at 10 p.m., these open-fronted cases remain completely exposed.
